A person with multiple titles is [almost] always addressed by their highest ranking title. [Camilla, Duchess of Cornwall is an exception] So, as both Sophos and Helen are reigning monarchs of their respective countries, if being announced by a herald or such they would continue to be "Sounis Sophos and Eddis Helen," because that title ranks higher than their title as consort.
