I've heard a lot there being two short stories at the end of KoA - One called Eddis, and one called Thief!. My copy has only the Eddis one (which is weird, because I think I have the copy everyone else has - the one that has Gen with a sword), and a preview of the first chaper of The Thief. Have I been cheated? If anyone knows a way to get to the other short story, I'd love to know how... I feel very guilty that there might be something QT related I don't know about. Thanks, all!

You have not been cheated! Only the Eddis story is in KoA. The short story Thief! was in Disney Adventures magazine many years ago and you should be able to download the pdf file here:

I'm not sure if Thief! was ever published in one of the books...it was a short story that was originally published in Disney Adventures.

Yes, we had a conversation a while back about how this business of "extras" in the paperback version serves to penalize those who paid more for the hardback. It's peculiar. Surely they don't expect everyone to buy both (as I did...).
